Heirloom Romas for zone 8a

I don't eat fresh tomatoes, but I do grow Roma's to slice and dehydrate. Any recommendations for the hot, dry Texas climate? I'm in zone 8a. I've got a small raised bed and am open to growing one other heirloom variety of tomato for my hubby. Thank you.
