Herbs in fish tank?

Perusing the Richters catalog, I found things like rau om:

Interestingly, when I google the Latin names, I get lots of pages from tropical fish fanciers who consider these ornamental aquatic plant for their fish tanks. Since I happen to have a fish tank, I'm wondering if I could turn it into an indoor aquatic herb garden, replacing the merely decorative plants with edible ornamentals.

Is anyone else doing this? Any advice? I'm thinking I should probably get my plants from herb rather than aquarium catalogs, in case ornamental varieties have lost their flavor. Are any herb catalogs in the US selling these plants (or do any fellow herb enthusiasts have them to trade) or must I import them from this Canadian company?
