Both of those symptoms appear to be caused by insects. The first images look exactly like the stippling we associate with a spider mite infestation. They live and feed mostly on the underside of the foliage.

The other images look like the damage caused by mites or aphids. If you turn the leaves upside down and look inside those puckered areas, you might see evidence of critters.

now some of the leaves are starting to die at the end of them, while sometimes whole stalks are.

i couldnt find any critters.

could it be anything else?

For problem 1, you may also want to check for thrips. They are very small and longish in shape and I noticed they also cause the same white speckling pattern on leaves of some herbs.

Problem 2 may be due to a nutrient deficiency. Check your soil's pH as well as fertiliser regime.
