If you have flat-leafed, or Italian parsley, thank your lucky stars! It is much tastier than the curly, and is better for culinary purposes.

It is not easy to know the diff. whent they are small, unless you are a parsley expert or are growing them side by side. small seedlins' leaves are not going to be curly early on.

The first few leaves are flat and the next ones become increasingly curly.

Agreed. Mature leaves often look very much different from the first few a plant makes.

And I agree with marlingardener too - flat leaf is tastier! It is also so much easier to wash before use.

Off: To me curly parsley seems to have much less moisture contents. That is why it make such a good garnish. Flat parsley, on the other hand, is juicy, tender and more aromatic, but will droop faster. I have some of both.
