Replant thyme every year? Also rosemary question

My two thyme plants from last summer are growing well, one is blooming heavily. Are these still good to use for cooking, or is something lost with their age? Should they be replaced now? Can the blooms as well as the leaves be used? (Not that I could cut off those teeny tiny blooms!)

As for rosemary, I see old rosemary bushes (years old) and wonder if those leaves are good for cooking as well, or if they are just too old.
