Common thyme doesn't need to be replanted every year. Even in my northern climate (and we've had snow this week), thyme survives and is usable year after year.

Rosemary is also a perennial and can be used even when it is a much larger bush - sadly it cannot grow/overwinter easily in my zone. But others in warmer locales have wonderful luck with their rosemary bushes.

I have both Thyme and Rosemary bushes that are several years old. They are still good for cooking. You can prune them/cut them back, and use the new growth for cooking although the older growth is fine also. Our Thyme is blooming now. Besides being pretty, it attracts bees to our garden. When it is finished blooming, I will give it a light pruning to encourage new growth.
