OK, sounds fun, I'll play. Horseradish?

Got it in one! :) Horseradish looks a bit outerspace-like when first sprouting. But it quickly sprouts and grows its more recognizable leaves.

I grow the variety "Variegata" and it has nice coloring like you can see in the plants on the attached page.

You certainly stumped me! The best guess here was an endive that was flowering. Which wouldn't have been an herb...

Genesis, Hmmmm....I've had it a number of years. I think it was originally Richters.
