Harvesting Transplanted Cilantro Plants?

I just bought three cilantro plants from a nursery and just planted them in a container (pot). They look pretty "leggy" and are leaning heavily to one side. The leaves are pretty large, however.

My questions:

1) Do you think it would be too soon to harvest them in a day or two in order for the plants to produce more leaves?

2) Should I put up a support around the plants so that they don't continue to lean over?

Other than them leaning and being leggy, they look pretty healthy. I know that this is a short-lived herb, but I don't mind investing the time in them, since I'll be replanting more once their cycle is over.
