Cilantro has a long taproot and does not like being transplanted. Transplanting usually prompts it to bolt prematurely. So I would think harvesting sooner rather than later would be a good idea because of the likely bolting.

You shouldn't need a support. But I would consider growing it from seed next time. That way you can plant them directly in the container you want them to grow in. I bought a cilantro plant and transplanted it when I was starting out for the first time. Never again.

Go ahead and pick a few leaves. That will help it have less leaves to need to feed during this transition time.

My family eats cilantro that is flowering also (including the flowers). It's still a good combination with some of the dishes we eat.
