Celantro plants small and flowering?

Hello everyone. Beautiful day in SW Missouri today and hope yours is as well. I planted two celantro plants 45 days ago and have harvested two ice cube trays to freeze. Suprising to me, the plants are only about 12" - 14" tall and have already bolted and starting to flower. One is in the garden and one is in a swc. About 2 weeks ago we had an unseasonal stretch of 90 degree weather for nearly a week. I figured that triggered the bolting. My question is this; is this normal for such a small new plant to do this? Should I just let it go to seed and harvest what seeds I can? Just wasn't sure how to go forward. Thanks so much for any help!
