Cilantro likes it cool and will bolt when the weather turns too warm. You can allow it to flower and produce seed if you wish. The seed (called coriander) is also used in the kitchen or you can sow it for more plants. I don't know what your summers are like, but early bolting may occur because of summer heat. Southern gardeners may have tricks to share for growing.

Thank you FataMorgana. I was trying to figure how to edit my post and spell it correctly. lol I figured the hot spell caused it to bold but it surprised me how small the plants are. I will harvest the coriander seeds if they yield enough as I cook a lot. Just a wild guess but, how long would you think before the seeds dry out to be harvested. Just a general idea would be appreciated. Thanks again.

The link says 40-60 days until maturity for the leaf and up to 120 days for the seed. So, doing the math up to about 2 months.

I hopped over here from the Hot Pepper forum and was going to search for info on cilantro and whaddya know.. it's a current thread!

I was wanting to learn how to prevent or slow bolting but reading that excellent link it appears to be a matter of time and conditions before it goes to seed.

As I finished reading that page provided, I was pleased to see that the test farm in Massachusetts is in my home town!
