how to harvest thyme?

we have a smallish thyme plant. it is growing very well. what is the proper technique for trimming the thyme plant? we would like to use a small amount on our steak tonight but the plant is also getting a little bit "stringy" and needs to be trimmed. do i just grab a little handfull and snip the ends off of it? help me before i go at it with a pair of scissors and mutilate it :o) thanks for all your help!

Snip a few stems near the base. Pull backwards on them and you have removd the tiny leaves. If any are dead looking, just cut them off.

Or - 'grab a little handful and snip the ends off it'. A little haircut won't hurt it at all.

I prefer the "near the base" approach, because with thyme it can be such a hassle to get the leaves off of the stems. Anything that makes what I'm dealing with closer to one long straight shot with fewer branches is a good thing in my book!
