Flowers along with the leaves. Although I personally would wait until the flowering has past since I do enjoy blooms (however tiny) in the herb garden.

Why do you dry your Thyme that is unless you are storing for later use. Fresh you can do the same tie with a long threat and toss it into the pot or lay it on your meat or on your coals while grilling. Or you can strip it from top to the bottom with no problem when fresh.

Wally...i use it fresh, dried, you name it! I store for use in the winter. However this year, i plan on trying to bring some indoors. I am going to try a pot in my greenhouse (an unheated poly hoop house) year round too.
