I use rubber bands.

Rubber bands or a bow. Just undo it and make it tighter. Although in reality I leave herbs lying down and they dry fine.

I use screens, no hanging. In my rather cool, moist and humid location (Western NY State), I find the herbs dry much better that way. I would get mold occasionally in the center of bunches hung to dry. You may see the same in your Canada location. If you are serious about drying herbs, give the screens a try.

I have noticed that the herbs under the cord doesn't dry as well and have cut it off and thrown it away in the past. Screens are interesting, but would require more room than we have; hanging is a nice way to make use of a small space. As for rubber bands, I've had them dry up and crack in the past, or simply deteriorate and stick to the herbs. Maybe I should stop buying things at the dollar store? :) Thanks for the tips everyone.

I generally dry mine in a fine mesh lingerie bag that I can put on a wire shelf over a fan. If I hang, the other thing I've used to bundle is the flat chip clips like this--then I get more of a flat bunch that doesn't have some herbs stuck in the middle. And they're much quicker to put on than bands or ties. Mine come from ikea, cheaper than this brand.

My screens are in a rack my husband put together. It is maybe 2.5 feet x 1.5 feet with places for 4 screens to slide in. It is about as big as one shelf on a good sized bookcase. The screens just sit on the rack and I can pull out as needed to load up or turn the herbs. I put paper toweling under the herbs to keep the screens and herbs clean.

FataMorgana, do you do anything special to get air circulating? I'm imagining a closed-in space, but perhaps that's wrong and it's just an open shell with slots to slide the shelves into.

Open. It is just a frame really. No sides, tops, etc. It is all made from plain, untreated pine. Probably molding-sized lumber since it doesn't have to bear much weight. Something like the item in the attached link only more simple.
