Stevia, Culantro and Common Plantain

Hi every one!
I'm growing Eryngium foetidum (Culantro, recao), Stevia and Plantago Mayor (common plantain). For some reason I have somehow ended with lots of plantago mayor (over 50 little plants) and stevia which I'm reproducing easily on my raised beds. Culantro is starting to grow and I'm expecting more than a 75 plants this season......what can I do with all that???? I use culantro for cooking since I'm from Puerto Rico and there is used a lot. Plantago mayor is used in Puerto Rico too as a medicinal plant and I personally consume it with the stevia which is great. I live in Princeton NC and if anybody is interested on some plantago, culantro or stevia for free let me know because otherwise I'll be drying a lot of herbs and making lots of tea!
