Drying is good. Lay cut herb on screens is my preferred method of drying.

Another option is scented sugars or honeys to use in tea later. I would store sugar in the freezer until ready to use.

For tea drying is fine.

For use in mint sauce, raitas, tsatziki, soup garnish, etc freezing in ice cubes keeps it green and fresher tasting.

try making ice cream with it (link below) I don't think that extract would be any different than fresh

In that recipe, you'd add frest mint as you're taking the cream mix off the stove and let it steep while you're ice bathing it. Then you'd strain the mint leaves out before proceeding, but let it steep a while first.
