Mint, Chocolate Mint & Lemon Balm: When to pick?

I have one of each of the three. The Lemon Balm is about 2 ft tall/long. The lower leaves of it seem to die off here & there (don't know if that's a problem or not). The Chocolate Mint has two "stalks" about 2 ft tall and 4 new ones (from a runner root) about 6 inches tall. The Mint only has two "stalks" about a foot tall. When can I pick these (all 3 plants) & what leaves do I need to pick? Please let me know. Any & all help appreciated. Thanks! =) I have somewhat recent pics if needed (about 4 days ago).

RE: Mint, Chocolate Mint & Lemon Balm: When to pick?

Pick often and regularly on lemon balm and other mints to improve appearance (more rounded and bushy rather than tall and leggy) and to have a constant supply. Don't take more than 1/3 of the living, growing plant at any one time. Let it regrow before repeating.
