Aphids on Peppermint

My peppermint has been doing really well until recently when the young leaves began to curl inward. I have aphids and I know about using soapy water and even a spray from a hose but I'm going to have to handle each leaf to direct any treatment to the protected area created underneath the cupped, deformed leaves. Should I just clip off the stems at the ground and let the plant develop new tops?

I have a large in-ground patch that isn't affected and I have three outdoor potted plants that are affected. My spearmint in the same pots at the peppermint doesn't appear to be affected.

If I cut off the tops, is it OK to make tea with it, aphids and all, or should I discard it?
