Sweet Vinegar Gobo

I thought I would share a favorite and unusual herb recipe. It is a recipe for tsukemono or Japanese styled quick-pickle made with burdock root. Enjoy!

Sweet Vinegar Gobo (Burdock Root)

  • fresh Gobo (burdock) root

  • 2 Tbsp sugar

  • 2 Tbsp lemon juice

  • 1 tsp salt (use sea salt for best flavor)

  • 4 Tbsp rice wine vinegar

1. Wash gobo well. Can peel if desired but not required with young, small root.

2. Quarter or halve root depending upon its size. Cut into 1 to 2 inch sticks.

3. Boil root for 2 to 3 minutes.

4. While root is boiling, mix marinade ingredients.

5. Drain root and add hot to marinade. Cool before eating. Let sit overnight for best flavor. Keeps 3 to 5 days in the refrigerator.
