You could've started months ago.
But in my opinion, you are better off to get some lemon grass stalks (from Asian markets) and root/plant them.
BTW, LG will overwinter in your zone so no need to plant it again.
I planted some from rooting last year. They got huge but did not over winter.
I have done the sane this year and they are growing nicely.
They will root very easily in water or soil.

I just found out that there are several kinds of lemongrass and sometimes you can get a type from nurseries that are actually citronella grass, which you don't eat, but make candles and oils from to repel bugs.

Anyway, I got some from a nursery this spring, but it isn't the kind for eating, so I got a bunch at the Asian store nearby and stuck several of the stalks into a bucket of water outside under the shade of the fig tree that's out front and in four days, it's put out some roots!

Since I got it at the Asian store, I know it's the kind you do eat and I got the bunch for a couple of dollars and can root it all for many plants, although I just want a couple of them for my own use. I will chop up the rest of the stalks and freeze them in small quantities to put into food.

Wait at least until after your last frost date. They are warm weather plants, from the tropics.

Well, I finally got some from the oriental market, rooted it in water and planted it out in morning sun last week. All 5 clumps are doing well. I've even taken a few pieces for tea, which I just love. Can't wait to make my first chicken or shrimp soup!
