Sweet Basil 2nd year flush

So while most herbs are annuals, sweet basil tends to grow year-round here in SoCal.

I'm in my 2nd year of sweet basil growth and new growth is coming out of old wood (dry "trunks"), the plans will flower for a period, then churn out new growth with flavor not being affected. I apply a fertilizer once a month and water it every other day.

I did dry out some of the flowers and managed to poke myself with their thorns, but the seeds are viable... I've sprouted 8 out of 10 seeds I paper-toweled and I've collected roughly 500 seeds. Not sure what to do with them at this point..

Any tips for my current crop? Is it ever too late to start basil in my zone since it grows year round?
