Aren't the pickled veggies the star of Bahn Mi sandwhiches? (Other than the seasoned pork, that is.) I think of a sort of slaw like combo of carrots, chinese radish, cukes, etc. with lots of cilantro. I'd recommend an unusual radish called the rat tail, if you want something terrific to add. I think traditionally cilantro is used. Depending on the protein you use, I would recommend experimenting with various mints, Vietnamese coriander, and Thai basil. I also suggest using green onion. Maybe try seasoning/marinating your protein with lemongrass, ginger, or kaffir lime leaves.
