Harvesting in the heat

Forgive me if this is something that's been discussed to death. I did search, but couldn't find my answer.

I have sage, oregano, basil, rosemary and thyme growing. It's 100+ degrees every day. The rosemary isn't doing much, nor the thyme. I think the rosemary isn't getting enough sun, but I don't dare move it in this heat. The sage is doing fine. The oregano and basil however, are going nuts! I cut the oregano back earlier this spring and dried some but it's huge again, and trying to bloom. The basil is 2 feet tall and I'm pinching blooms every day! I know I need to cut it back, but I'm afraid of killing it in the heat.

If I cut the basil and oregano back, will the heat kill it? I'm keeping them well-watered, but it's just SO hot! Can I just cut just the top 1/3 or 1/2 of the stems?

Any help would be great!
