Epazote Failure - What went wrong ?

Epazote leaves are described as to have a pungent, strong flavor. Leaves from my plants have no flavor at all. Chewing on a leaf I felt nothing. It was like chewing a piece of paper. Even paper has some flavor, but those few leaves had nothing !

OK, besides a low intensity recognizable greeny floral taste common to leaves from every plant, there was no any other flavor. By tasting my epazote you would never say it's a herb, much less recognize what sort of herb.

Growing it in a hardiness zone 9a, from seeds. Plants are well lushy, and about 5ft tall (1.5m).
Watering every other or every third day, in a composted soil previously used for commercial mashrooms growing.

Please, can someone tell what went wrong ? Thank you.
