Dill is an annual. It will die after flowering whatever you do with the plant. Use the stems however you can and sow more. It has a very short life cycle and you need to resow regularly all through the growing season. Your dill will not regrow once it has flowered.

Perhaps you can use the stalks( and seeds) to flavor pickling.

Another Note:
there are two kinds of Dills ; (1) Giant (2) short, fern leaf.

The later has s lot more tender greens for use in like dip, pickles. The first one is mostly for seeds(culinary use) and ornamental in flower arrangement.

I don't know what kind of dill I had, just bought it at a local plant store...should have paid more attention. It did start out nice and small with feathery green bits, we picked quite a bit off early in the season for cooking, so I think its that one.

I know it is now unusable. Do I rip the root system right out of the pot it's in then? And plant some seeds that will hopefully come up next year?

Sure .Pull it up, if done with it. and plant something else in its place. It is an annual.

If you are pickling your veggies, you can cut stem in pieces and use when you are pickling

Or put the stems in when you bake or poach fish.
