When to plant cilantro

I've ordered some cilantro seeds for the fall, and I was wondering when I can start sowing them. Right now, our average high temps are in the upper 80s. Do I need to wait for them to drop to a specific value before I can sow the cilantro successfully? I don't want it to fall over, or start bolting. Thanks for any help.
