I wouldn't eat it. Can you give us a picture? Sounds like an annual flower to me.

There are many Salvia and not all of them are edible. Salvia splendens is a red salvia you could compare against. I do believe it is just an ornamental and not a edible herb

There are several perennial Salvias with red flowers but none are culinary. They may not survive the winter in cold areas but they are still, strictly speaking, perennials.

Whatever it is, the hummingbirds love it.
