You're probably the victim of slugs, snails, or cutworms. Next time it comes out of the ground, put something around it to keep it safe, like cut the bottom out of a styrofoam cup and place it over the sprouts where they can grow through, and see what happens. yes, it should come back up. If the roots are healthy, it will eventually send up new growth.
