What ate my herbs??

I live in lower Manoa and just started a small garden with starter plants and herbs from Koolau Farmers and Home Depot. The plants have been in the ground just a few days. This morning, I came out and two of my Manoa Lettuce plants were completely gone! Two others were clearly nibbled or eaten, but I can't tell by what. My cilantro plant and chives were also eaten to the roots.

I've never seen mongeese in our area. Could be a dog but our yard is fenced and I've never seen mystery dogs or stray cats get into our yard (no pawprints in the garden, either). Rats? I've seen a few of those around. Snails? Any ideas? Whatever it was, it took all these plants out in one night because they were there yesterday evening.

Perhaps it's been eaten by a very hungry slugs or snails. If you see a glisten or shiny trails, then it must be the culprit. I once planted seedlings of sweet red peppers and the next day it was eaten to the ground, it seems there wasn't any evidence that it was planted. When I sprinkle the ground with those slug and snail pellets, I was satisfied to see dying, shriveled, slugs the next morning.
