squash stalks

I recently ate some zuchinni stalks from the leaves ... raw.
I found some info on the Italians cooking them.
I had some yellow squash stalks this morning with eggs.
Fuzzier .. some fiber left over after chewing.. but not bad.
Has anyone tried this?

I can't think of any good reason to eat squash stalks. Any parts you remove from the plant just slows it down, to say nothing of the prickly nature of the stems???
