How do I store jerusalem artichokes?

I have about two big paper sacks full of jerusalem artichokes that I just dug up.

Now they're shriveling, sort of like ginger or carrots.

How can I store these for winter?

Should I freeze them? Should I bury them in a trash can full of wet sand in my basement?

Hm...I used to grow them, the one's I wanted to sprout up in spring again, just left them in the ground untouched.
