Lindac's apple cake recipe, my version

I made my version of the cake for Christmas Eve dinner and my adult sons thought it was fabulous!!! I added 1/2 cup each of raisins, appricots, dates, dried cranberries, and extra pecans to the apples. I also added more flour and the cake was baked in a bunt pan. I served it with ice cream or cool whip. Wonderful to the last crumb.

I would make it again and I plan on making more of the apple recipes that I made copies of.

Sounds fabulous! I will add your alterations to the recipe. Did you add much more flour?

Hi Cynthia,

Yes I did add about a cup of extra flour. It made the cake much more solid when done. I also baked it longer but I 'm not sure of the total time. I just checked with a tooth pick for a couple more times before I took it out.

I don't usually mess around and change recipes I have never made before but I thought there was too much moisture in the cake when I finally added all ingredents so added extra flour till I liked the feel of the batter. It was very 'thick feeling' when stired.

I may try it the correct way and see what that looks and feels like when done. I may prefer it that way although my version was very good.

Another reason I changed the flour was because I added more cut up fruits than called for and I didn't measure the apples just used all I had prepared.

I don't bake as much as I did when there were more around to eat it! My H and I don't need the extra goodies.

Wonderful, Connie! I agree that more flour would work much better! I did almost the same as you (minus dates)
and it was difficult to hold together!

I can't wait to try your version--the dates added to it should be a great addition!!!

Hurry back, ya hear! don't enjoy Florida so much that youu forget to come back to us and more importantly,
your HOSTA!!!

Look at this....months ago and you are messin' with my cake! LOL!
Try it my way just once....it's not dense as a fruit cake which it would be if you added a cup and a half more dried fruit and half a cup of nuts...I am sure it was a good cake....but certainly not MY apple cake.
My cake....cooked in a 9 by 13 pan which allows more moisture to evaporate is not like a "fruit cake" it's a tender fresh very yummy cake, and particularly good when served with the cake gravy.
Feel free to make your recipe...but when you add dates and raisins and cranberries and nuts and more apples and flour....and serve it with cool-whip...it's NOT my apple cake.
