If you plant seeds now, it is questionable if the plants would be large enough to survive the winter outdoors, even with protection. If you intend to grow them in the winter or even next spring, I would freeze them. Put them in a freezer bag and then inside a plastic container and keep them frozen until you want to plant. I've had seeds stay viable that have been frozen for up to three years.

you figure out how to build a light setup .. with adjustable height ... and plant them indoors.. in about mid dec.. and have some hosta fun in winter ...

hosta library bob.. has a great tutorial right there in the middle of the HL home page .. some nonsense like : SEED GROWING... highlighted in black ...

obviously.. you dont have to get that carried away.. but all your variables for success would be there ...

all you would need is a SIMPLE fluorescent light ... hardware chain and a dedicated table... many peeps use the basement workbench ...
