Pruning corn plant that's already branched

I have a corn plant that is tall and bare at the bottom, so I'd like to prune it. It's just one main stalk (is that the proper term?) that has already been chopped and has branched into two stalks. I hope that makes sense.

If I chop one of those branches, will it grow new leaves? I've really only seen the main stalk split into new branches, so I'm not sure how it works when it comes to pruning a second time.

I'm planning on putting the tip in the pot to root it, so I have two main stalks to fill it out.

Is there a best time to do this? I have a second corn plant that needs similar pruning, but I'm going to wait and see how it works with the first one. DH would be unhappy if I messed that one up!
