to prune or not to prune

Hi,
I have couple of hoyas that are doing nicely and beginning to flower for me. The other day at the farmer's market, the orchid seller had a shooting star hoya for sale that I bought. She told me to cut off any stem that I thought was too long and the plant would respond by branching. I know enough not to cut away any peduncles, but some of my other hoyas do have very long stems with very widely spaced leaves. Is it true that I can trim them with no harm to the plants? They do tend to grab my hair and tickle my neck sometimes (fresh!). Any advice for dealing with the long stems appreciated.
