Maple syrup

The taps usually go in on February 22nd but this year the first trees were tapped March 7th. Not all the taps are in yet and it still looks like winter out there but the chances are that when spring finally arrives, it will be here and gone very fast.
Is anyone else making syrup? My crew generally gets 2 gallons or so but this year is not promising. |

| We tap earlier than that - dh taps the south side of the trees when we start having any days above freezing. The taps went in the first week of February this year. From only a few taps (12 or so), we have almost three gallons of syrup so far! We heat our house partially with wood anyway, so the sap gets boiled down that way. In the last week, we've barely kept up... |
