How do I know if my Hydrangea and Lavender are dying

I'm an entry level "wannabe" gardener, and I have a south-facing patio as my play ground. Since Valentine's Day, I have received couple foil-wrapped plants (one Hydrangea and one Lavender). They were both looking healthy in the gift basket, that's why I decided to plant them in a permanent container. However, once I moved them to container, they started to look droopy and dead. I have reading a lot of posts, and making sure they have enough water. In last week or so, weather changed from 80F to 55F in SoCalf, I'm not sure if its weather related or I'm killing them by transplanting. Please help!
