Question about timing of acid addition

Most - but not all - of my hydrangea mopheads are pushing out petals now. They are all pink, including my "Nikko Blue", haha -- except my Trophee, which looks to be almost RED, actually. I guess the soil here is too alkaline, naturally.

I have aluminum sulfate that I can add, just hadn't yet because I wanted to see what came out, first. For the ones that have not yet pushed out petals (ie: just the little bud clusters, or not even those yet) is it too late to add the aluminum sulfate to affect their color? Or even for those that have bloomed, can the color be changed after they open?
