Incrediball overwintering?

I am a brand new newbie to gardening. I bought 3 1 gallon incrediballs from sooner in late June. Like others, they were quite teeny, just a twig with a couple leaves. They are doing very well now and have a ton of leaves and probably about 12 inches high. What, if anything, should I do to these to protect them this winter. I have read about cutting them back in the spring but they are so small - should I do that to such a young plant? Last question, do I fertilize this hydrangea? If so, what would you suggest and when. Sorry for all the questions, I love hydrangeas and I want to get them off to the best start! Thanks for your help!
