PeeGee Tree pruning

I purchase a PeeGee Hydrangea which was trained as a tree, early this spring. It seems to have knobs or nodes along the branches about 3 inches apart. It seems that all of the new growth this summer sprouted from the nodes at the end of the existing growth.

Unfortunately deer came through and took off most of the leaves and also broke some of the new branches. How can I trim these broken branches off so that branches will regrow from the existing nodes?

Also, is there any general advice regarding pruning a PeeGee as a tree or training it for an appealing shape? Thanks!
