Air temp vs Water temp

Hey All,

I've heard many times that keeping your water temp at about 60F- 70F is great for lettuce and most plants. I'm interested in growing lettuce in my garage in GA...Which can see some high temps.

My question is...Would the lettuce bolt with 95F air temp while having 68F water temp? I haven't seen any good videos or limits to this strategy.
