Root's lettuce always under water for hydroponic

In this video explaining how hydroponic lettuce are cultivate, we see that the roots of the lettuce is always under water, how does the roots breath ?

i am confused

ps: they don't use bubble air because the water is calm

Likely the diffusers are producing very small bubbles. You don't see any turbulence but be assured they are aerating! Smaller you can get the bubbles, better oxygen saturation in the water.
