I think your talking about rockwool or oasis cubes. But to answer the question of what kind of root structures hydroponically grown plants have. That depends on the system you put them in, and how you train them. You don't need to do anything to train them, but you can. The roots will always fallow the moisture. Up, down, left, right, they go where the moisture is. The amount of root mass you get depends on how big the plant is, the bigger the plant, the bigger the root system. As long as you provide enough root space, moisture and nutrients for the root mass, it couldn't care less where it is.

As for placing the rockwool or oasis cubes in the chicken wire, well you can. But it wont stay there long without some sort of cup holding it in place. They will break apart fairly easily, and the weight of the plants will cause it to just fall through.
