It looks like you basically peel of the skin and keep them moist until they germinate. refer to the current germination thread where we've discussed using a paper towel for germination. That's what I would do. it's worked well for me when starting pumpkins and spaghetti squash.

If you're germinating seeds in rockwool, don't use nutrients. Seeds already have everything they need to become a seedling - just add water.

Here's how I germinate:
First, I take a paper towel, moisten it, and then put the seeds on one half of it. Then I fold it over (unevenly - you want the corners mis-matched so it's easy to unfold later). Put in a dark waterproof container, spritz a little water on it so it's nice and damp but not soaking wet, and ignore it for at least a day.

Check daily for the emergence of a tap root.

This is important: as soon as the root is showing VERY CAREFULLY drop the seed into the hole in a rockwool cube. If you damage the root you'll probably kill the seedling.

The rockwool should be presoaked per usual and so forth. Keep it damp but not soaked with ordinary water (I've used tapwater with no apparent problems.) Plants don't need nutrients, even in hydroponic settings, until the first true leaves emerge. Before then you risk killing them with overfeeding.

As far as the coffee goes I'd recommend germinating them by a more traditional means: ordinary pot with soil. Once you've got several leaves on them and a good root system you can carefully remove them and clean the roots for transfer to hydroponics, but I don't think I'd want to do that personally.

From the pictures I've seen they're a pretty large plant (almost a tree). With 3-5 years before they bear fruit that's a lot of dedicated resources in hydroponics just to see them mature. For my time and money I'd say soil is just a much better option.
