Lettuce worked for me last year.

I think peppers are very easy. Cayenne is easier than bell pepper in my experience. Bell's are more sensitive to their environment it seems. You can grow them in pots if you want to. Just add the nutes occasionally. I have two pepper plants in "self watering" pots ($6 at Menard's). I did modify the pots just a bit by adding some wicking material (felt). I use 12" pots. They sit outside. I use bamboo to support them.
