Continual Crops

So basically I have a question that may be stupid. How do commercial farmers keep a continuous supply of a crop? Do they just have a huge amount of space and then strategically plan out the timing of new growths?
The reason I ask is because I can grow cilantro but I want to grow enough that My friends and I can have a continuous fresh supply all season(we use alot of it) and I don't have a ton of space.

We run 2 nurseries, keeps the nft system full. If it weren't for our nursery we would be 4-6 weeks between harvests, as it is lettuce spends about 15 days in the nursery and about 25-30 in the nft. We overflow on occasion. If we run short we use cut and come again which would also work for cilantro.
This is our small nursery, the other is 8'x10'
