3 Beginner Questions

I Moved from California to Arizona a couple of years ago and am unable to grow in the ground due to critters (Elk, rabbits, etc). I am also frustrated by the short growing season (I'm in the mountains...can't plant until late May).

My questions: With an ebb and flow system, should the water be completely removed, or should it be kept at a level where the lowest roots hanging below the basket can reach it? Can a larger plant like a tomato be grown in a small basket if there is sufficient nutrient flow below? Since the days get short here in the winter, in general how much light each day, and what are the temp extremes acceptable in a greenhouse? Thanks everyone!
