Wilting on Harvest

Hi, everyone

I am growing lettuce (deer tongue and freckled Romain) inside under T5 lights, I am using the deep water method and keeping the water at 6.0PH and around 600ppm.

The problem is when I harvest the lettuces it wilts with in 24 hours. Like totally limp, uneatable. Im harvesting at 6 weeks.

When I harvest I pull the sure to grow cube from the net pot and the grow rocks, and wrap the remaining roots around the cube. Then I put it directly in the refrigerator (about 36 degrees) with in 5 minutes of harvest. When I check the lettuce the next morning it is completely limp! This has happened 2 times now, my first 2 harvests.

The seeds were purchases from heirloomseeds.com, so could it be the seeds or am I doing something wrong?

Any help would be greatly appreciated, this is very frustrating.
