Help!! Privacy/noise screen

We just moved into a house that backs a fairly busy street and I would like to plant some fast-growing privacy/noise screens. I just don't know what to plant! We have kids and pets and I was looking at the Privet hedge, but then read that they were poisonous...
Anyone have any recommendations? Also, when would I plant these? We're in Hayden, Idaho, which I believe is zone 5!

| Privet leaves and berries are poisonous, although this plant is widely used. As a screen, it does form a dense hedge, but is deciduous and provides less screening in the winter. You might want to plant an evergreen such as arborvitae or one of the upright junipers like 'Spartan'. These will give you year-round screening. |
