what is meant by 'pinching' the plants back?

as you can see...i'm new at this...what is meant by pinching the plants back? i gree some snap dragons from seed....and it said to do this too...but i never did because i dont know what it means or how to do it!!!

You in effect prune any overly long branches or shoots back either with your fingers ("pinch") or scissors to your desired length.

Basically you "pinch" of the tip growth of a plant. This would be the very top couple of leaves.
