Anyone out there growing your own veggies and interested in canning some of them? March 31, at 7:00pm there will be a Food Preservation Basics class at the Extension office in Oskaloosa. This class is great for beginners as well a good refresher for others .... the guidelines do change from time to time! It's free, but they do encourage preregistration, by phone 641-6783-5841 or email at terpstr@iastate.edu

| Wish when I started canning many years ago had place to take class on it. But I learned from my mistakes. And just how many veggies I need to plant. Have cut down and still giving away. But the people who can't garden anymore love fresh veggies. |

| I know what you mean, these classes are rare in Iowa. They don't even have staff at Iowa State able to train Master Food Preservers:( Last year our county fair and the Iowa State Fair had entries disqualified because of improper canning methods. Really hoping for a good turnout at this class so they will offer more! Barbara Anderson from Ottumwa, ISU Extension Family Nutrition Specialist, will be teaching it. I firmly believe im planting more veggies than we need ... gives me plenty to can (even in a bad weather year)and it's such fun giving the extra away. Just found out our Farmer's Market only charges one dollar to sell ... so might have to give that a try too. SOS |

| So, do you guys pressure can? I started out with the hot water bath method, but quickly went to pressure canning. Now, I don't really do much canning at all... Just a bit of hot/sweet pepper relish and pickles... Diann IA Z5a |

| With the gas prices rising, our produce will be going up in price.We all might start thinking about growing more and preserving it. I started canning again last fall. I used to can when my kids were small. Stopped for about 15 years. I found I kind of enjoyed it. I just wish this class was a little closer to where I live. |

| Diann I pressure can as well as water bath can. Pressure canning is awesome, not to mention the only safe way to can some items, like green beans and meat. I like to pressure can tomatoe products even tho most are safe in a water bath - with the addition of an acid. Just seems faster and uses lots less water! Whatcheer, How far from Osky are you - about an hour? Maybe you could email and ask if she would do a class in your area?! You are so right about gas prices. Not only could home grown/canned produce end up being cheaper, it's always higher quality! Ugg...just realized I sound like a commercial for home canning lol SOS |
