I'm the webmaster of Brighton Park Iris. Ginger is indeed a historic iris and it is very difficult to come by. Currently there are only two sources that grow and sell Ginger.

On daves Garden site, when it says

Seed Collecting:
N/A: plant does not set seed, flowers are sterile, or plants will not come true from seed.

Does that mean the "ginger" iris will not produce seeds (reproduce sexually)?
Or does it mean something else? All the other iris plants i've looked at on daves garden say the same thing. They can't all be sterile can they?

Unfortunately, quite a few of the details that you see on davesgarden are usually generalized, because there aren't enough options to choose from when adding a plant. In this case, the detail that most accurately conveys what they're saying is the last part of the sentence: "plants will not come true from seed"

In general only "pure" species will develop into a plant that is virtually identical to it's parents, but most irises most definitely do produce seeds. It's almost the only way to create a new variety and people have devoted their lives to the development of these flowers (creating astonishing breakthroughs) only to see that they're potential is still yet to be fully realized.

Some are, in fact, sterile. This usually involves the plant's ploidy (chromosome count). Some have counts that don't match and that can result in sterile offspring or no seeds at all.

It's a very complex subject that, even collectively, we don't really have a grasp on just yet and there are many, many people more knowledgeable on this subject than I.

The short and simplest answer is: yes 'Ginger' is most likely capable of producing seeds, but every seed will be a different variety that won't be identical to it's parents. Also, it's not likely to go to seed by natural means (pollinators such as bees) and if you wanted to see what kind of children you could produce you would probably have to make the cross yourself.

There's so much more to learn on the subject and I hope this doesn't scare you away from the idea, because it's a fascinating topic and you could find a lot of joy in creating your own seedlings.
