For what it's worth, I heard that deer love holly and hate spruce.

Unpredictable. Here they show no interest in holly (Ilex aquifolium) and apparently prefer spruce for rubbing, so young specimens are spoiled even though not being eaten. Hunger will drive them to eat some plants they don't eat most of the time. If you can't fence you are stuck with planting what they skip most of the time, hoping they will never be driven to eating that as well. Look around your neighborhood to see what they are ignoring.

Maybe you could build a shishi odishi to help scare them off. Dog hair spread around your garden keeps deer away as well.
